Vegan Potato & Spinach Balls

Today we are posting vegan potato & spinach balls, trust me they are better than they sound! These are super easy and a nice vegan treat the whole family will love!



Ingredients:

 3 big Potatoes (any kind you like)
2 or 3 cups of Spinach fresh or frozen (or any other leafy green)
3 cloves of Garlic
1 tbsp Basil
2 tbsp Chives
2 tbsp Parsley
1/2 tsp Cumin
2 tbsp Nutritional Yeast (optional)
3 tbsp White Wine (optional)


Instructions:


Chop the potatoes in big chunks and boil until done but very firm (about 6 minutes). Add some salt to the water if you want. You can use frozen spinach, no problem with that. Just make sure to get all the water out before cooking. 

Chop the Spinach , it doesn't have to be perfect. Cook it in a pan with the chopped garlic and the wine (or substitute for water) for 3 or 4 minutes until it's soft. 

Chop the herbs. You don't have to use fresh, I just happen to have a mini garden of herbs. You can definitely use dried. 

Mix everything in a bowl, (including the nutritional yeast if you have it on hand, if not don't worry) and let it rest until it's cool enough for you to touch it without burning your hands. It should look like pictures 3 and 4 below. 

Then proceed to make small balls (like meatballs). I got 17 one and a half inch balls out of this recipe. 
Bake for 15 minutes at 450 degrees. Make sure you put some cooking spray in your baking dish so they don't stick.

Vegan Meatloaf

Okay, today we have another recipe from our collection. We would like to share the recipe for vegan meatloaf. So here it is!




Ingredients:

One package Boca vegan soy crumbles (Morning Star Soy Crumbles are not Vegan)

1/2 Cup Diced Mushrooms

1/2 Yellow Onion (Diced)

2 Tbsp. Vegetable or Canola Oil ( for sautéing veggies)

2 Tbsp. Diced Garlic

1/4 Cup Diced Jalapeños 

4 Tbsp.Worcestershire Sauce

2 Cups Bread Crumbs or Crumbled Crackers 

2 Tbsp. Mustard

2 Tbsp. Ketchup (will need more for topping as desired)

1/4 Soy Milk

1 Tbsp. Paprika (Optional)

1 Fake Egg (I use Ener-G Brand, it will work without this, but I have found it holds together better with it.) (optional)

Instructions:

1. Pre-heat oven to 375.

2.Defrost soy crumbles, but do not heat beyond defrosting.

3. In a small sauce pan start sautéing them onions, jalapeños, mushrooms and garlic. Do this for about 5-10 minutes on medium heat, stir frequently. 

4. In a medium sized mixing bowl add together remaining ingredients. Mix together well.

5. Once the veggies have finished sautéing, drain any access oil that might remain and stir into the rest of the mixture. 

6. Coat a medium sized glass baking dish, or bread pan with non-stick cooking spray. Add the entire mixture to the baking dish. 

7. Cook mixture for about 20 minutes at 375, it should become a darker brown color. 

8. Remove mixture from oven, coat the top with a layer of ketchup. about 3 Tbsp. Return to oven and let cook for another 5-10 minutes. 

9. Remove and serve, should yield around 8 servings!

Vegan Tofu Fajita Burrito

So today we are posting something of our own creation, the tofu fijita burrito.  This is a fully vegan recipe, but could easily be enjoyed by anyone. It is very simple to make, and is very tasty! Ingredients:



2 Tbsp. Margarine

1/2 Yellow Squash (Cut into thin strips)

1/2 Yellow Onion (Diced)

1/2 Green Bell Pepper (Diced) 

1/2 Cup Jalapeño Peppers (Diced)

3 Tbsp. Soy Sauce

1 Tbsp. Garlic Powder

1 Package Cubed Tofu ( Extra Firm )

5 Flour Tortillas 

2 Tbsp. Non-Dairy Sour Cream (I use Tofutti brand)


Directions:

1. Add margarine to large non-stick skillet and reduce to liquid. 

2. Add the veggies to the margarine and let simmer on medium heat for about 5-10 minutes, depending on how crunchy you like your veggies. 

3. Drain tofu, and try to remove as much moisture as possible!

4. Once you have the veggies to the consistency that you like, add the cubed tofu to the veggies. Stir fry the tofu veggie mixture for about 2 minutes. 

5. Add the remaining ingredients (except sour cream and flour tortillas), continue to stir fry for about another 5-10 minutes depending on how dry you like your tofu. 

6. Wrap flour tortillas in a moist paper towel, and microwave on high for about 20-30 seconds. 

7. Once the tortillas are warm, spread a thin layer of sour cream on them. 

8. Add tofu and veggie mixture to the tortillas, roll them burrito style and enjoy!!

We apologize for the lack of recipes the past few days, babywingo is sick and its taking all my energy to deal with a sick 13 month old, and his two unsick brothers, we are lucky if I cook at all let alone take pictures of it! Mini Omelets

This morning we thought it might be nice to make up some mini omelets that we discovered on Pinterest. These seemed very easy, and since I have had a great deal of total failure with omelets in the past, these were definitely worth a try! Below is a picture of the final product as shown in the pin as well as a link to the pin itself.

So as usual we started by gathering our ingredients (We just made our omelets bacon and cheese for the kids) : 5 eggs, 3 Tbsp half and half, 1/2 cup bacon bits, and 1/2 cup shredded cheese(we used sharp cheddar) , and non-stick cooking spray.



After we had all of our supplies we added the eggs and half and half to a mixing bowl and mixed it using a fork, after that we added the mix to the cupcake pan.




After we had added the mix to the cupcake pan, we added our filling! We sprinkled a little bacon and cheese into every cup. After everything was in the pan we backed on 350 for about 12-15 minutes.





Finally we got to remove them from the oven and see how they worked out! Yay they are a success!! The mini omelets worked out exactly as described! Not only were these very tasty, but the kids loved them as well. I can see many occasions were these would be a real time saver, these can be picked up and eaten on the go. You can choose to add any ingredients that fit your taste buds, we just used the supplies we had on hand at the time! Feel free to comment with any questions! Thanks for reading!

Baked Cheese Balls

So we were going to try the marshmallow caramel popcorn next, but as most of us know, it is way too hot for something that sweet at the current moment. So instead we tried the baked cheese balls we found. The picture from the pin is posted above.





Okay, so we started this by gathering the three simple ingredients the post called for : String cheese, milk, and bread crumbs. I placed the breadcrumbs in a gallon sized Ziplock bag and shook them for about two minutes after coating with milk. Finally I placed them on a greased cookie sheet and baked on 425 for the recommended 10 minutes.

Finally for the reveal!!
Yeah the turned out about exactly as I had assumed, but since we all know what they say about assuming, we gave it the old college try! As you can most likely tell from the picture above though, they did not work! Not only was the milk not nearly enough coating for the breadcrumbs to stick to the cheese, but they completely melted in the process as I assumed they would! So as for now, the baked cheese balls are an epic fail! Check back later for our version of a working baked cheese ball!

Kit Kat Cake 2.0

OK!! The cake turned out AMAZING!! It was a HUGE hit with the family! We made a few changes as you can see. 1) Ours is rectangle instead of round which I thought made it super easy to apply the kit kat bars. 2) we used white kit kat bars instead of chocolate because we wanted ours to resemble a picket fence. 3) we used all green mint m&m's which I wasn't too sure about at first but with the chocolate cake it worked out awesome! We used one box of devils food cake in a 13x9 pan and cut it in half, then we trimmed the edges to size and stacked them on top of each other. If you use the white kit kats use white frosting behind them or it will look like a very dirty picket fence, and that's just not all that appealing.( to me at least) The flowers I made out of the card stock punch outs you can buy huge packs of them in different colors for scrapbooking. And the stems were just two straws cut in half. This was super easy to make and very good to eat!If you have a flower/garden lover (like my mom) I suggest trying this cake out, it was awesome! Kit Kat Cake

Today we will be making the Kit Kat Cake we found on Pinterest for my moms birthday, we will post the results later this evening. Will it be a great success or another epic fail? Check back later this evening to find out! We will be making a few minor modifications, but it should get the idea across just the same.

Cupcake Mold Pizzas

My post for today is going to be about one of the first thing I tried from Pinterest, the cupcake mold pizzas. When I saw these for the first time I knew they would be a huge hit with our children, but I was very skeptical as to whether they would actually work out or not. First we gathered all of our ingredients: The cupcake mold, Pillsbury Pizza Dough, Shredded Cheese, Hormel Pepperoni Minis, Pizza Sauce ( We just used Ragu Marinara ), and then the cupcake tin.

Next we sprayed the pan very lightly with non-stick cooking spay and added the pizza dough. The link connected to the pin used a muffin pan, and did not describe how to place the dough very well. We just used as much dough as it took to cover the bottom of each cupcake hole, that seemed to work out fine.

Next we applied the sauce, cheese and pepperoni. We have made these two times now, and you definitely have to put more sauce than might seem necessary. We only put about a tablespoon of sauce the first time around, and they turned out very dry. The second time we nearly doubled that and that seemed to work better. The cheese and pepperoni are pretty self explanatory.

Finally we baked them on 425 for about 10-15 minutes and BOOM!!! They turned out great! Overall I think the pizzas took about 20-25 minutes from start to finish, and they turned out great! Our kids loved these, and it makes great deep dish mini pizzas that kids and adults alike will all enjoy!
